You read that title right.  You can have cookies for breakfast!  Suddenly, the sun is shining brighter (which is saying something, because it's raining right now.)  All is right with the world and even the news that's playing on the internet radio is all good (Okay.  So that's an exaggeration.  But getting to eat cookies for breakfast is still pretty great.)

I wish I could say I was responsible for this wonderful contribution to society, but it was another blogger who first realized that the reason there is so much stress in the world is because people don't get to eat cookies for breakfast.  It was Sally at Sally's Baking Addiction that came up with a Breakfast Cookie Recipe that tastes yummy and you can still feel good about serving for breakfast.

At our house, this recipe passed the "Mom" test, which means the ingredients are wholesome, whole foods and not so strange that I need a dictionary to figure out what they are.  It passed the "Dad" test, which means it's good for you and still tastes good.  In fact, he said it tastes like a Cliff Bar, only better.  This recipe even passed the "Kid" test, which just means it has to taste really, really yummy.  And did I mention that they are easy to make?  Pretty much a dump and pour recipe.  And it's easy to grab and go on busy mornings.  The Breakfast Cookie will be a frequent visitor at our house.

(Side Note:  I used almond butter, sunflower seeds instead of pumpkin seeds, golden raisins instead of regular and my own homemade apple butter.  I also used the optional ground flaxseed.  I was just using what I happened to have on hand.  I think this recipe would be highly adaptable to your own tastes and needs.  It is also gluten free if you use certified gluten free oats.  Enjoy!)
